I bought the Universal Plus Mixer about a year ago, and after some initial "getting used to" (the design), have grown to absolutely LOVE it for mixing up bread dough. I also put together waffles, mix cake batter, and make batches of cookies with ease. For those who have jumped on the cake ball bandwagon, this machine is great for mixing the crumbled cake with frosting to make the cake ball "dough." I use this machine more than I even expected (I am eagerly expanding my kitchen repertoire), and have loved it.

HOWEVER... my latest interest is in baking cakes and making frostings from scratch. Unfortunately, to make a basic buttercream frosting, there is a heat step in which you dissolve sugar on the stove and then pour it into your mixer to be blended with other ingredients. Seeing as I have the polypropylene bowl (which comes standard), I was concerned about dumping HOT ingredients into the bowl. I contacted the supplier and received a message back that confirmed that Bosch says not to put anything that exceeds the boiling point of water (212F) into this bowl. So I thought this might justify a purchase of their stainless steel bowl, but when I looked at the stainless bowl's specifications, the center spindle (to which the beaters/wisks attach in the center of the bowl) is made of the poly propylene. REALLY?

Now I'm a little aggravated. After all the research and accolades for this mixer (which are certainly true), finding out that I can't make basic buttercream frosting without killing my arm doing it manually or dealing with a hand-held mixer is a definite con. Should I look into the Kitchen Aid after all?

This machine is almost spectacularly bad. The design of the hook for making bread, etc., is awful. The beaters--all of them--fit awkwardly because you cannot see what you're doing to drop the attachments in place. It is difficult to put the bowl into its bottom shaft where it must be placed to operate--again because you cannot see what you're doing. As for capacity, this machine works overtime to handle only a few pounds of bread dough--mine just died trying to turn about 4 kg. of croissant dough (the machine is only a few months old).

It is hard to clean, especially where the bowl meets the base of the machine--fluids constantly collect in there and unless you use cotton swabs you'll soon have rust and mold in that nice 1/4"x1/2" hole.

The bowl has a sort of double lid--one about 2" deep and then a 2nd one that fits across the middle of the machine. The lids connect in opposition to each other, and again, are awkward to set in place, and to use.

The mixing levels (M/1/2/3/4 where M and 4 are the same speed) are too high/fast at the low end (1), and the range is too close together; that is, there's not much change from 1 to 4. And the M (mix) and 4 speed are the same, so you're only getting 4 speeds, not 5.

I am just stunned at the high rating this machine has received. Its poor ability to blend, the difficulty of using attachments, its low pound capacity (max is 2 kg. or 5 lbs.) for breads/croissants/danish, the guck factor where fluids can collect in the middle of the machine where the bowl attaches, and its overall awkwardness make this machine an absolute zero.

So, I killed two kitchen-aids (one a pro model) with the amount of baking I do. When the pro model croaked I knew I had to ante up for something stronger. After reading many rave reviews, I bought the Bosch Universal Plus and have had it for about 2.5 yrs now. After all the hype I was surprised to find that I don't love it. There are several design flaws that are a constant source of irritation, as follows:
1. Multiple pieces to put together to use the dang thing. The rotation attachment from below, screw the bowl in just right (I usually have to spin for several rotations), the beater on top and then the two part lid. If you don't put on the lid dough flies around. If you want to use cookie or whipping attachment there are an additional three pieces to put together for either option. With the Kitchen-aid you stuck on the beater and off you went.
2. The low setting is not slow enough. They advertised the new model with super slow speed, which was one reason I bought it. I don't know what the other one was like but this is not slow for bread.
3. Cleaning is a hassle. The central cylinder and bowl have a lot of surface area covered with dough, but worst of all is the hollow part of the central cylinder that is on the underneath of the bowl. It can get truly gross and requires a bottle brush and lots of soaking and elbow grease to scrub it. There are visible screws under there and stuff gets kind of caked onto it and hard to clean. I am referring to the replacement stainless bowl. I haven't used the original plastic bowl so don't know if the same problem exists.
4. With smaller batches (1-2 loaves) dough is not scraped up off the bottom and sides. If the dough is not in the central dough ball, you have to stop and scrape it up. With other mixer styles the dough ball has contact with the sides and continues the mixing process.
5. Takes up a lot of room on the counter.

On the positive side, it is definitely strong and can definitely knead the number of loaves it says, including heavy dough. The whipping attachment works beautifully as do the cookie paddles. There are additional blender and food processor attachments. If you decide to get this definitely shop around as there is a wide range of prices.
